We all struggle to come up with healthy dinner ideas that don’t make us feel like a nervous wreck. There are so many healthy dinner recipes out there, but most of them are either very complicated, very expensive, or very time consuming. You and I both have things to do and places to be, but we want to look and feel fabulous as well. Today I am sharing one of my absolute favorite easy healthy dinner recipes: turkey chili stuffed spaghetti squash. This dish is hearty, healthy, and delicious!
The Budget
We know that eating healthier CAN get expensive (not as expensive a medical bills, but I rest my case). This turkey chili makes either 2 large servings or 4 smaller servings. I usually end up making it into 3 servings, 2 stuffed in the squash and 1 serving of just the chili. This entire recipe costs less than $10 to make. When was the last time you made 3-4 servings of a hearty, less healthy meal for less than $10? That is what I thought.
The Ingredients
There are only 2 ingredients that will go bad quickly with this recipe if you don’t use them quickly, and that is the turkey and the squash. Other than that, you can stock up on beans, seasoning, and tomato paste so you are ready to roll. You can also make this recipe for just the chili. I do that quite often! Eat it on its own, over rice, or even with some homemade pita crisps if you are feeling feisty. Dinner ideas don’t have to be complicated!
The Timing
This recipe will take a total of 4 hours to make. What I usually do is make the chili and bake the squash on Sunday and stick in the fridge so I can just nuke everything on a weeknight. However, if you are going to be home you can make the chili, and in the last hour of the chili cooking stick the squash in the oven. Bingo! Everything is ready at the same time!
The Recipe
Turkey chili stuffed spaghetti squash
Chili
- 1 can red beans
- 1 can black beans
- 1 packet chili seasoning
- 16 ounces 93% ground turkey
- 1 small can tomato paste
Add all ingredients to the crock pot and cook on high for 4 hours!
Squash
1 small Spaghetti squash
Half, scrap out seeds, season with salt and pepper.
Bake face down in 375 degree oven for 45-60 minutes or until a knife slides through the skin easily.
Put it all together
Put 1 cup of chili in a half of the squash. Top with 1/4 cup fat free cheese!
Dinner Ideas: Turkey Chili Wrapped Up
Turkey chili wrapped up? That isn’t a bad idea! You could also wrap the chili in a low carb wrap to make it like a chili burrito. That would be interesting.
